Avocado Tomato Sandwich

Melt coconut oil in nonstick pan. Brown bread on each side to desired level. Spread premade guacamole on each side of bread. Layer tomato, red onion and freshly sliced avocado. Layer with "cheese", basil and sprinkle with oregano. Now eat!

Notes

PS Avocado used to be my nemesis. I used to eat it on my salads, on sandwiches, wraps and in guacamole of course. One day I noticed that overtime I ate avocado, I would become nauseous. However, I never became nauseous eating guacamole. I discovered that I could drizzle with citrus and it would be not only well tolerated, but delicious. Now I don't have any nausea and I can enjoy the delicious nutrition that is offers my body.

People say avocado has too much fat so they stay away. Somehow the same reservation doesn't occur with chicken or beef for that matter, but that is beside the point. Avocado has the good fats of omega 3 fatty acids that is a natural anti-inflammatory. I love the fact that I am decreasing my risk of heart disease and maintaining healthy cholesterol levels. It is also a fruit that has a good protein content.

The high antioxidant levels keep the skin looking amazing and the inside feeling great! The gluten free bread is especially good for diabetics since gluten inhibits beta cells function.

Lastly, I cheated on making cheese. I purchased it from one of our health food stores in the area. It is a non-dairy coconut-based cheese and is pretty tasty. Look for Chao or Healthy Gourmet slices. I like them the best.
